We are the
Lutz Food Prep Class. Our mission is to
assist the students in preparing to work in
the food service industry. That could
include many different types of jobs:
-
in a
fast food restaurant, stacking
sandwiches, making fries, preparing food
items, and cleaning up;
-
in a
hospital or nursing home, as a
dietician's assistant ;
-
in a
family-style restaurant or a steak
house, as a chef's assistant;
-
in a
catering hall, after a wedding or a
banquet.

We train the
students in both cooking and cleaning, since
they may get a job in either of those
areas. Jobs may include dishwashing,
vegetable prep, entrée assistance, frying,
baking, mixing, stirring, chopping, cooking,
salad-bar maintenance, etc.

We
use a five-page checklist, throughout the
semester, in working with our students.
Our primary focuses are on sanitation and
safety. We over-train in these two
areas, in hopes that, when they present
themselves on the job, our students will
remember much of what we have imparted in
these areas. In addition, students
learn basic food preparation, to operate all
of the kitchen utensils and equipment, to do
basic kitchen tasks, and to perform routine
kitchen cleaning and maintenance jobs.

We do not
expect the students to be proficient at all
of these duties when they leave our class,
but rather to have an orientation to the
tasks so that, on the job, they may more
readily remember and/or learn how to perform
a particular assignment.
Public
relations is a big part of our job. It is
important that our students are able to get
along with people, and that they are
cheerful and accommodating. Pleasant
conversation with the public is mandatory;
students need to have a good sense of humor
and a positive attitude. Music is
ever-present in restaurants, and it is
important that our students learn to maintain a constant work pace while enjoying
the tunes.

Our philosophy in Food Prep is:
"Nothing succeeds like success!"
We spend much time on orientation,
helping the students to learn their
tasks correctly, no matter how long
it takes. Eventually, he/she
will become quicker and more
self-assured. If a student is
successful today, he/she will look
forward to learning more tomorrow.
